Mexican Lasagna

Growing up in a family of seven, with a working mom and all us kids involved in numerous activities, meals were a pretty "grab and go" experience. As a mama myself, I realize now what effort it took my own mother to make a warm meal every night and provide us with all the variety that she did. 

A family favorite, still to this day, was my mother's mexican lasagna. I introduced our little clan to my own spin on this dish the other night and want to share it with you today. It's a very simple recipe and only takes 20-25 minutes to prepare. Hope you enjoy!

MEXICAN LASAGNA 

Ingredients
1 lb. ground turkey
1 package mexican seasoning
1 can diced tomatoes & green chiles
1 can refried beans
10-12 small flour tortilla shells
1 1/2 cups shredded cheese (mexican blend)
Optional: Side of lettuce & cilantro blend and sour cream


Directions

1) Brown ground turkey; add in seasoning packet and can of diced tomatoes & green chiles once meet is mostly cooked; let excess liquid simmer off2) Cut tortilla shells into thirds; layer bottom of a 9x9 glass baking pan with shells as pictured3) Spread half a can of refried beans over first layer of shells; top with another layer of shells4) Fill second layer with meat and tomato mixture; top with third and final layer of shells5) Spread remaining refried beans over third shell layer; top with cheese
6) Cover and bake at 350 F for approximately 25 minutes. Remove cover for last 5 minutes of baking.







NOTE: This meat/tomato mixture is fairly spicy: substitute a can of plain diced tomatoes for a milder flavor.
